zucchini white onion bell pepper tomatoes cucumber radishes avocado jalapeno pepper cilantro corn cut off the cob cooked garbanzo beans baked potato baked sweet pototo
You can mix as many of these ingredients together in whatever amounts and combinations please your appetite and your stuff on hand. The potatoes and or garbanzo beans are for the times you really are hungry! Or for the times you are feeding the family and want something lighter for yourself.
Mix it well and pile it on a plate and use one or both of the following dressings. I usually put one on each half of the plate.
Green Dressing
2 cups chopped zucchini 1/2 avocado lemon juice salt
Blend together.
This is mild flavored. If the salad is mild also you might want to add some jalapeno or onion.
Red Dressing
2 red bell peppers 1/2 white onion lemon juice salt
Blend. This is watery. You can add clear jell. I usually add some chia to soak up the juice.
